The word "biltong" is from the Dutch bil ("buttock") and tong ("strip" or "tongue").  Biltong is a form of dried, cured meat which originated in Southern African countries (South Africa, Zimbabwe, Malawi, Namibia, Botswana, and Zambia). We use 100% organic beef. The cut of meat we use is Sirloin Center and and do it in two styles and two flavours - Style 1 is a Traditional Style where we take a fillet of meat cut and dry it into 1.5" thick slabs and then cut that against the grain into 1/2" thick pieces by 1.5" wide. The second style we do is start with flat 1/4" strips, dry them and slice with the grain which we call "Strip". It is more relatable to beef jerky and easier to eat; both styles are spiced, and dried. We do also have both style in Non Spicy and Spicy versions. You can choose.and mix and match.
